Five Minute Lunch!

Another five minute lunch!!!

Chicken Salad

I made a Garlic Lemon Chicken last night and had lots of leftovers! Therefore I decided to use the chicken and make some homemade chicken salad for lunch the next day. First I started off with 1/2 of a tortilla. I like doing half of the tortilla because a whole one is extremely large!


Then I diced some onion, celery, and dried cranberry and added it to the diced chicken.


Next, I grabbed some Greek yogurt and some cumin. I am not a fan of mayo, never have been. Therefore, I always try and find healthy substitutions for mayo. For chicken salad, tuna salad, deviled eggs, etc I use Greek yogurt instead. It's great because it has no real flavor yet mocks the consistency you get with regular mayo. Also because it is flavorless it will take on whatever spices you decide to use with it. I chose curry powder!!

Add as much Greek yogurt as you would mayo. Then toss in some curry powder according to taste and VIOLA! Delicious and healthy chicken salad.


To round out my lunch I take some leftover pineapple and blueberries.

Then add some organic carrots, organic spinach, orangic orange, and some sugar free dark chocolate pudding jello for a snack!

There you go! Another quick and easy five minute lunch for work!

Five Minute Lunch!

First start off with some random fruit. Whatever you have in the fridge.

Chop up the fruit into some bite size pieces and add to some Tupperware


Then grab whatever yogurt you have! I have recently become HUGE fan of Greek Style Yogurt. Why? Because it packs double if not triple the protein of regular yogurt without adding that many extra calories, plus I get the all natural version which has no added chemicals!

Add the yogurt on top of the fruit so that you create a nice top layer. Then drizzle some honey and cinnamon over the yogurt. This will help cut the bitterness of the Greek yogurt and add some delicious flavor without added calories.


Next make a mini pita pizza!

Take whatever cheeses you have in the fridge and whatever herbs and stick them in a small Tupperware container. I picked basil, fresh mozzarella, and ricotta cheese.

Then take whatever spaghetti sauce you have and throw it into another container

Then finished! Takes five minutes and I have a great nutritional lunch!

Like I have stated before preparing your own meals is really essential in maintaining a healthy lifestyle. Take five minutes out of your morning or even pack your lunch the night before and throw it in the fridge! This will help you from over-splurging on takeout or snack on empty caloric food!
